Spicy quesadillas and Sweet strawberry shakes

It has been one hectic week! I just started my second job and I am just starting to get used to my busy weekly schedule. But don’t worry, I still had time to make some quick and delicious meals to share with you guys!

We all know the classic stick-a-tortilla-in-the-microwave-with-cheese quesadilla… But here is a recipe for a more spruced up version!

prep time: 2 minutes

cook time: 5 minutes

  • 4 small corn tortillas

  • 1 can (~15 oz) black beans (drained, rinsed and mashed with a fork)

  • 1/2 cup cheese, grated

  1. Spread mashed beans on each tortilla.

  2. Sprinkle cheese over beans.

  3. Add anything else interesting: salsa, leftover veggies, etc.

  4. Fold each tortilla in half. Cook in ungreased skillet on medium heat until cheese melts.

Variations:

Use instant refried beans. They keep on your shelf nicely; just reconstitute with boiling water when needed.

Add salsa, sour cream (low fat), tomatoes, lettuce, mushrooms, onions.

Flip quesadilla on both sides when cooking.

It is mighty tasty. Buy some chips and salsa and you have yourself a Mexican fiesta! After all of the spice, you will need something to wash it down with. How about a strawberry shake?

  • 1 pint(s) vanilla ice cream, softened

  • 1/2 cup(s) whole milk

  • 1 pound(s) strawberries, hulled and quartered

  • 2 teaspoon(s) finely grated lemon zest

  1. In a blender, purée the ice cream and milk until smooth.

  2. Pour into 4 glasses

  3. Enjoy!
